It is, and has been, asking for trouble. But drinking this before and during the Champions League semi-final match Ajax – Tottenham Hotspur, seemed a good idea at the time.

What a wine!

P2 stands for Plénitude 2, i.e. ripeness stage 2.

P1 as such does not exist, as that is the standard Vintage – currently the excellent 2008.

P2 is the stage at which this Dom Pérignon 2002 has reached excellence in all its rich splendour, after having spent the last 15 years on its lees, ‘sur lattes’.

Dom Pérignon is champagne for the long haul, and therefore made in a very reductive style. Now, almost 17 years old, it is ever so youthful, pure, light-footed, almost airborne and titillating.

Un régal (a delicacy), no une tuerie (murderously delicious).

It is for good reason that Dom Pérignon has received 5
stars in my book Champagne – The Future Uncorked.
